I’m a fan of beans. They are good for you, taste good and extremely flexible, much like this recipe I’m about to share with you. I mentioned it was easy because it is!
- 1 Can Black Beans
- 1 Can Green Beans
- 1 Can Garbonzo or Kidney Beans (your choice)
- Your favorite Vinegar/Oil dressing
- Salt and pepper
I know I didn’t mention can sizes above, just get all the same size, 12oz I think.
Open each can of beans, rinse them under cold water and add them to a mixing bowl. Toss with your favorite dressing, add a pinch of salt and a few grinds of pepper and your all set. You could give this 30 minutes in the fridge to let the flavors mix, but it’s not necessary.
Jazz it up by adding some chopped cilantro or parsley, maybe a diced jalepeno or some diced tomatoes. You could even add a little corn to this if you wanted.
Serve this by itself with anything or add it to chopped romaine hearts for a quick salad.
